You know whatโ€™s so great about this?! You can make it while you sleep and in the morning you can eat ice cream, guilt free! Whatโ€™s better than that??? Of course, the peanut butter is totally interchangeable, you can use any other nut or seed butter. Vegan, gluten-free, sugar-free, and suuuuper yummy!

Rainbow chard is sooooo beautiful. Itโ€™s so naturally vibrant. Iโ€™ve made this a few times with different variations, but this is definitely my top favorite version. If youโ€™re really into greens and earthy vegetables, this is the perfect meal for you.   These beautiful greens make a perfect salad or side.

Rice is a grain and therefore not considered paleo or compliant on the autoimmune protocol diet. For my kids and I, itโ€™s a safe food. You could always substitute for a different rice such as cauliflower, sweet potato, or omit it completely. Either way, it will still taste super yummy. Hereโ€™s a funny tidbit โ€“โ€ฆ

My friend suggested that I try to make a little fruit tart. Not that Iโ€™ve given up on that idea, but I had a hard time thinking of a tart filling that didnโ€™t involve dairy or coconut (both of which we canโ€™t have). So, I moved on and decided to fill it with marshmallow instead! Iโ€ฆ
