This is a great alternative to sugar laden ketchup that uses tomatoes and other nightshades. Nightshades cause inflammation to the gut and can cause a lot of issues like bloating, fatigue, rashes, and mood changes. Not to mention if you have an allergy to tomatoes. This is one of the better recipes I have come up with when it comes to ketchup. It’s the closest thing! And super delicious.

Ingredients
- 1 16oz bag baby carrots
- 2 small precooked beets
- 1 small sweet onion or 1/2 cup chopped
- 1/2 cup apple cider vinegar
- 2/3 cup filtered water
- 2 tsp pink himalayan salt
- 1/4 tsp ground cloves
Instructions

Steam carrots and onion until soft and tender. Add all the ingredients to a blender and blend until smooth and there are no chunks.

This is enough to make a batch. I like to keep a small amount in the fridge and store the rest in small containers for the freezer for later use.
