This is just like your classic pasta salad except without the bloat and discomfort you get from eating grains.
I love anything where I can chop up meat and veggies to whatever size I want, toss it all together, and shove it in my mouth. This is exactly that. If you don’t like the size or portions of it, you can recreate it for yourself! This salad is totally interchangeable and easy. And did I mention it’s toddler approved?!?!!
A classic pasta salad without the grains!
- 10 oz package of zucchini noodles (I used Veggie Noodle Co)
- 4 oz can of olives halved
- 1/2 red onion sliced
- 1 cup artichoke hearts
- 4 oz salami slices halved
- 1/2 cup Homemade Italian Dressing
Add all ingredients to a bowl and mix. Can be eaten immediately or refrigerated.
