This meal was definitely toddler approved.
Β Cauliflower has so many wonderful uses! I love making gravy, cheese sauce, thickeners for anything, and now using it as a rice substitute. I’ve made this before with beef and it’s just as tasty, but my 1yo LOVES it with bison. She went nutso for it. I have practiced baby led weaning with my kids so she is very familiar with how to handle food and gauge her gag reflexes. She eats full meals the same as I would. In fact, this was her plate of food I took pictures of, ha!
Korean Style Bison with Broccoli and Cauliflower Rice (GF, DF, SF, Paleo)
A yummy grain free dinner!

Ingredients
- 1/3 cup coconut aminos
- 2 tbsp honey
- 2 tbsp sesame oil
- 1 tbsp ground ginger
- 3-4 scallions chopped
- 1/2 tsp black pepper
- 1 lb stir fry bison strips
- 1 16oz bag of cauliflower rice (can be found at most store in the frozen veggies section. Sprouts, Trader Joe's, Natural Grocers, Whole Foods)
- 3 cups steamed broccoli
Instructions

Heat cauliflower rice as directed on the bag, usually over medium high heat on the stove until all liquid is removed.

In a bowl, whisk together the coconut aminos, honey, sesame oil, ginger, scallions, and pepper.

In a medium cast iron skillet, saute the bison strips until all the meat is brown or however you prefer the meat to be. I like a little pink in mine still.

Add the sauce to the skillet and bring to a quick boil then reduce heat to a simmer for about 3 mins.

Serve over the cauliflower rice and steamed broccoli.
