These gooey bars are easy to make and easy to devour....

Jeez, it took me long enough to post these! Haha, sometimes the world gets ahead of me and Iย run out of time, every time. I made these about 2 weeks ago and they were really good. My non-paleo/non-anything friends said they were good. Even my husband liked them! The filling is so delicious. I’ve been on a major berry kick (and shrimp, ha!) ย and this satisfied my craving ๐Ÿ™‚

Vegan Berry Bars (Gluten Free, Soy Free, Refined Sugar Free)

A sweet treat for breakfast, dessert, or whatever you feel like cause they're amazing

Ingredients
For the crust
  • 2 cups gluten free, nightshade free flour
  • 1/2 cup coconut oil
  • 1/3 cup maple syrup
  • 1/4 tsp pink himalayan salt
  • 1/4 tsp vanilla bean powder
For the filling
  • 1 12oz bag of frozen raspberries
  • 1 16oz package fresh strawberries
  • 1/3 cup maple syrup
For the topping
  • 1 cup tapioca starch
  • 1/3 cup coconut oil
  • 1/2 tsp vanilla bean powder
  • 2 tbsp maple syrup
  • dash of salt
  • 1/4 tsp beetroot powder optional, for color
Instructions
  1. Line a 9x13 baking pan with parchment paper and preheat oven to 350 degrees F.

  2. Combine all ingredients for crust and mix until a dough forms. Press into the parchment paper evenly and bake for 15 mins.

  3. In a medium saucepan, bring the berries and maple syrup to a boil and simmer for 10 mins.

  4. Pour the berry mixture over COOLED crust.

  5. For the topping, combine all ingredients and mix gently with your hands to form crumbles. Spread over the top of the berry mixture and bake for an additional 15 mins.
