I’ve been trying to post this recipe all week and have so many people asking me for it, but I just haven’t had time. Life keeps popping up with a million things that take priority…..like sleep, ha! Well, here it is finally! Yay!
Speaking of Wonderwoman… what a great movie! Animation has come so far, it’s crazy. ย I watched it with my 3yo and sheย isย OBSESSSSSED with her.
The great thing about these bars is you can use nut or seed butter you want! We used peanut butter because it’s safe for us, but sunflower seed, almond, or cashew is totally cool too. Whatever jams your toast will work for this!
Chocolate PB Oatmeal Bars (Vegan, Gluten Free, Sugar Free)
Yummy, healthy bars that make a great breakfast, snack, or treat!

Ingredients
- 2 cups gluten free steel cut oats
- 3/4 cup peanut butter or any nut/seed butter
- 1/3 cup maple syrup
- 1/4 tsp pink himalayan salt
- 1 tsp vanilla extract
- 2 tbsp coconut oil melted
For the ganache...
- 1 cup dairy free chocolate chips
- 2 tbsp coconut oil
- 1/4 cup maple syrup
Instructions

Grease an 8x8 pan and set aside. Combine all the ingredients for the bottom portion in a small bowl and mix together until well incorporated.

Using a spatula, press the mix into the pan until it is evenly flat and all the edges are pushed down.

In a small saucepan over low heat, add the ingredients for the chocolate and stir until everything is melted. Do not let boil.

Pour over the oats and refrigerate for 6+ hours. When ready to eat, take out of the fridge and let sit for 5-10 mins before cutting individual bars.
