Quinoa, Spinach, and Cherry Lettuce Wraps

This stuffing mix makes a great, versatile leftover.

Ingredients

  • 1 cup quinoa, spinach, cherry stuffing (see link) divided
  • 2 leaves romaine large
  • avocado for garnish

Instructions

  1. You can heat up the mix or eat it cold - it tastes delicious either way. Spread 1/2 cup of it in each leaf and garnish with avocado.

  2. Optional - you can drizzle with olive oil or other dressing if you like.
