Super Simple Peanut Butter Fudge (Paleo, Vegan, GF)

Any seed or nut butter can be used in place of peanut - as long as it's creamy.

Ingredients

  • 2 cups creamy peanut butter (or any nut/seed butter)
  • 1/2 cup coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla bean powder or vanilla extract

Instructions

  1. In a saucepan over low heat, add all the ingredients and stir until melted through. Do not let boil. Once everything is melted, pour the mixture into greased molds or mini muffin tins and refrigerate for at least 6 hours. Store in the fridge to keep fresh.
