These red cake bars are a great way to feed your kids hidden veggies or to enjoy a sweet treat without any nasty dyes.
I had been trying for a week to get something RED. I tried different versions of waffles, cupcakes, and bars. Everything flopped until I tried this recipe. They’re not as red as I’d like but at least they’re not BROWN. I think the color of these really depends on the color of your beets. Had I used freshly cooked beets instead of vacuum sealed precooked beets, I think the color would have been more vibrant. Still, they tasted pretty good and my toddler enjoyed them with me. These remind me of a wacky cake texture. The frosting and chocolate chips make a perfect pairing on top.

Ingredients
- 2 small beets precooked
- 1/3 cup coconut oil
- 1 cup honey
- 1/4 cup maple sugar
- 1.5 tsp vanilla extract
- 1 cup gluten free, nightshade free flour
- 1/4 cup tapioca starch
- 1.5 tbsp cocoa powder (can sub for cacao)
- 1.5 tsp baking powder
- 1/4 tsp himalayan salt
- 1 cup alternative milk (I used rice milk)
For the frosting
- Simple Mills Vanilla frosting
- Enjoy Life chocolate chips
Instructions

Preheat oven to 350 degrees F.

Blend the beets, oil, extract, honey, and sugar until it turns into a liquid consistency.

In a bowl, sift together flour, cocoa powder, salt, and baking powder.

Slowly alternate adding the beet mixture and milk into the flour.

Let the batter sit for 10 mins for the baking powder to set.

Lightly coat a 9x13 pan with oil and add the batter.

Bake for 33 minutes or until a toothpick comes out clean.
For the frosting

Once the bars have completely cooled, spread frosting over it then slice individual bars and top with Enjoy Life Mini Chocolate Chips
