This sweet and sour mix is to die for.
Alright, alright, call me crazy,ย but this made an UH-Mazing breakfast. I rarely even eat breakfast but I woke up and I was like, “I could really eat some bomb slaw right now”….ย So, I did. I love the dressing from He Won’t Know It’s Paleo. I have probably made everything in her recipe book at least 5 times. It’s just so good!
Cole Slaw (Vegan, Paleo, AIP)
I love love love this slaw and could eat it any time of the day!

Side Dish
Ingredients
- 1 8oz package shredded red cabbage
- 1 8oz package shredded lettuce
- 1 8oz package shredded carrots
- 1/3 cup pumpkin seeds
- 1 cup dried cherries
For the dressing...
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/3 cup olive oil
- 1 tbsp palm shortening
- 1 tbsp apple cider vinegar
- 1/4 tsp pink himalayan salt
Instructions

In a large bowl, add all the ingredients for the slaw.

In a small saucepan over medium heat, dissolve the honey into the lemon juice to create a syrup. Do not let boil. Transfer to a mixing bowl and mix on high speed until completely cool to the touch.

Add the oil, shortening, vinegar, and salt to the syrup. Beat on high speed until creamy.

Pour the dressing over the slaw mix and try not to devour all of it at once ๐
