Preheat oven to 325.
Soak pitted dates in hot water for 10 mins. Strain and combine all ingredients except water in a food processor. Blend until it starts to build up on the edges. Scrape down the sides with a spatula and add the water. Blend again until mixed.
If adding chocolate chips, add them now and pulse one or two times until combined.
Grease a mini muffin sheet or tin and add about a tablespoon size into each spot.
Bake at 325 for 10 mins.
