Chocolate PB Oatmeal Bars (Vegan, Gluten Free, Sugar Free)

Yummy, healthy bars that make a great breakfast, snack, or treat!

Ingredients

  • 2 cups gluten free steel cut oats
  • 3/4 cup peanut butter or any nut/seed butter
  • 1/3 cup maple syrup
  • 1/4 tsp pink himalayan salt
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil melted

For the ganache...

  • 1 cup dairy free chocolate chips
  • 2 tbsp coconut oil
  • 1/4 cup maple syrup

Instructions

  1. Grease an 8x8 pan and set aside. Combine all the ingredients for the bottom portion in a small bowl and mix together until well incorporated. 

  2. Using a spatula, press the mix into the pan until it is evenly flat and all the edges are pushed down.

  3. In a small saucepan over low heat, add the ingredients for the chocolate and stir until everything is melted. Do not let boil.

  4. Pour over the oats and refrigerate for 6+ hours. When ready to eat, take out of the fridge and let sit for 5-10 mins before cutting individual bars.
