I played around with this dressing for awhile and I finally perfected it!

You could totally make this without turkey and it would be vegan! It’sΒ really good with turkey, though. I used the dark meat of rotisserie turkey and it’s uh-mazing.

I also think the cotton candy grapes really pull this together. They’re super sweet and crunchy and balance out the celery and turkey. Usually, macaroni salads have apples in them but it’s a huge allergy in my family so I opted for water chestnuts instead!

Dairy Free Macaroni Salad

Ingredients
  • 1 bag or box rice pasta gluten free
  • 2 cups cooked turkey cut into small chunks
  • 2 cups grapes, cut in half I used cotton candy grapes
  • 1 8oz can of water chestnuts diced
  • 2 stalks celery thinly sliced
  • 1 cup dried cherries
For the sauce...
  • 1.5 cups vegan mayonaise
  • 2 tbsp honey
  • 2 tbsp white wine vinegar
  • 1/4 tsp mustard powder
  • 1/4 tsp vanilla bean powder
Instructions
  1. Cook rice according to the instructions. Rinse with cold water and drain. 

  2. Combine all the ingredients for the pasta in a bowl with the pasta.

  3. For the dressing, add all the ingredients to a small mixing bowl and mix until smooth and creamy. Add it to the pasta mix and gently fold everything together. Try not eat it all in one sitting, ha!
